Common name: Northern Bluefin Tuna
Chutoro (K2), a lower top quality, derives from the tuna belly at the middle of back of the tuna, which is not as much marbled when compared with otoro(K1) sashimi. Although the flavor is inferior to the big abdomen, the bilge is still on the rank. K2 has less fat than K1 but is still veined with streaks of fat, and is still beautiful , tender, and delicious.
